Job Description:

Under direct supervision of the Corrections Food Service Supervisor III, monitors offenders in preparation and serving of food; monitors offenders in clean-up and sanitation procedures; inspects food before, during and after cooking; maintains inventory records; enforces and maintains disciplinary, safety, sanitary, security, and custodial measures.

Job Responsibilities:

  • Monitor offenders in preparation and serving of food for offenders and in maintaining equipment weighing up to 50 lbs.; keeps a record of all food supplies; performs food preparation, food service and sanitation as well as cleaning, sanitation and maintenance of all food service areas and equipment.  Inspect, weighs and measures item used in food preparation to ensure compliance with establish menus and recipes.
  • Monitors offenders in clean-up and sanitation procedures for kitchen equipment and facilities; explains and enforces the rules and regulations covering the assignment of duties; searches offenders and all kitchen areas for contraband; verifies that doors are locked and adheres to all security measures.
  • Inspects food before, during and after cooking to ensure proper preparation in compliance with recipes and menus; assures attainment and   maintenance of the cooling and holding temperatures of food; evaluate the dishwashing operation and adheres to strict cleanliness and hygiene.
  • Maintains inventory and records of food items used and their expiration dates; prepares requisition orders; maintains stock, inventory and supplies; receives and inspects boxes and containers weighing up to 50 lbs.
  • Monitor daily activities of offenders allowing food supplies, tools and cleaning supplies to be properly issued and accounted for; reports infraction of  rules by inmates for disciplinary action.
  • Performs other duties as required or assigned which are reasonably within the scope of the duties enumerated above.

Job Requirements:

  • Requires knowledge, skill and mental development equivalent to completions of four years of high school.
  • Requires two years of experience in food preparation in large-scale food operation
  • Qualifying state employees in the employee Upward Mobility Program may complete combinations of specific proficiency tests and training programs leading to a certificate of proficiency in lieu of the stated requirements for this classification.
  • Requires completion of an orientation-training  course within six months of employment
  • Requires possession of a current Food Service Sanitation Certificate issued by the Illinois Department of Public Health, or requires a possession of a Certified Food Protection Manager (CFPM) certification form a program accredited by the American National Standards Institution (ANSI) Conference for Food Protection (CFP)
  • Requires thorough knowledge of food service sanitation
  • Requires extensive knowledge of institutional rules, regulations, and requirements for the control of offenders
  • Requires working knowledge of food and nutritional values
  • Requires the ability to instruct and supervise offenders
  • Requires the ability to work in conformance with the provisions of the Illinois Food Service Sanitation rules and regulations pertaining to methods and procedures
